But, My Kids LOVE it!!!

My MIL made them Cheeseburger Pie when she came to babysit last month, ¬†and now they are BOTH requesting it. ¬†That’s right….

I. SAID. BOTH.

So, I just had to share with you a dinner that I can add to the (very short) list I like to call: ¬†“Dinners Both Kids Will Eat”. ¬†These dinners, as we all know, are few and far between, so when I find one, I feel its my parental duty to share!!!

I made my first one this week, by request, and only have one picture taken right out of the oven, pre-slicing. ¬†The kids (and hubby!!!) gobbled it up so fast, I never had a chance to get a good pic of a slice. I’m sure I’ll be making this again next week. I’ll try and snap a pic then and update the post. ¬†As for now, I wanted to get the recipe out to y’all asap!!! Enjoy and share with all the parents you know! ¬†This ones a life changer! ¬†Nana made the original recipe from www.chowhound.com and I have made a few adaptations. ¬†Here’s my version below:

  • Heat Oven 400¬į F. ¬†Make sure the oven rack is in the middle. ¬†Coat one 9-inch pie dish with Cooking Spray.
  • Warm frying pan over medium heat. ¬†Warm 1 tablespoon Oil. ¬†Add diced onion. ¬†Sprinkle with salt and pepper and cook for 5 mins or so until golden but not brown. Raise Heat to Med-High and add ground beef, salt, pepper, and dry mustard. Stirring occasionally until the meat is browned. ¬†Add Worcestershire sauce and stir. ¬†Then add garlic and cook 1-2 mins until fragrant, but not burned!!! Take off heat and Drain Off Fat. ¬†Spread cooked meat mixture evenly into the pie dish.
  • In food processor, pulse together flour, baking powder, sugar and salt. ¬†Add the cold butter pats and pulse until mixture starts to look like breadcrumbs. ¬†Add milk and eggs and pulse until mixture is blended.
  • Pour batter over meat mixture in the pie dish.
  • Top with shredded cheese of choice (totaling about a cup).
  • Bake until set and a gorgeous golden brown. ¬†About 25-35 mins or until a knife inserted into the middle comes out clean.
  • Let cool for 5 minutes. ¬†Slice and served garnished with fresh chopped parsley or chives.

E.D.B.Tips

You can change this basic recipe up tons of ways!!! Simple additions depending on your families tastes and preferences.  Heres a list of some simple, delicious ingredients to add:

  • Mushrooms
  • Spinach
  • Red Pepper
  • Roasted Red Pepper
  • Pepperocini
  • Parsley
  • Rosemary
  • Tomatoes

If your kids won’t eat chopped Onion and Garlic, you can always try adding 1 tsp Onion Powder and 1 tsp Garlic Powder.

 Or try adding Sliced Scallions or Green Onion.

Experiment with your favorite ūüßÄCheese on top. ¬†Feta, Mozzarella, Parm, Goat,Blue, Fontina…the list goes on and on!!!

ūüĆ∂ūüĆ∂ūüĆ∂Spice It Up a little with some Hot Sauce, Crushed Red Pepper or Cayenne.

this will be the easiest, tastiest, loveliest layer cake you’ll ever make! ¬†so simple, that my kids did most of it!!!

 

As promised, I’m getting this recipe out for the upcoming Holiday weekend. ¬†This simple showstopper will be a HIT at your 4th of July Cookout with both kids and adults. ¬†You can also customize the cake in tons of ways!!! ¬†Set up a cute little topping stations with: ¬†Chopped Nuts, Caramel, Hot Fudge, Strawberries, Cherries…just set the toppings out and let the partiers go wild!!! ¬†You can also make it smaller or larger by adding more Ice Cream Sandwiches…just be sure to buy a little more Cool Whip as well! ¬†The hardest part of this cake is to make sure you have enough room in your freezer to store it. ¬†I put mine on foil on a baking pan to make it and transfer it back and forth. ¬†That worked perfectly. ¬†Just make sure there is room in our freezer for it to sit straight! ¬†I used our deep freezer. ¬†Ok, so this is going to be a quick, basic recipe blog post because I don’t have time to edit and take quality photos. ¬†The Cloud was demolished so quickly, I’m going to have to remake the cake to take better pics. ¬†These are the ones I snapped along the way with my iPhone. ¬†They will do for now, so my lovely readers can get ready for the weekend!

Layered Ice Cream Cloud Cake

INGREDIENTS:

1 box Ice Cream Sandwiches (12 Sandwiches)

1 Large Container Cool Whip (16 oz)

2 tsp Vanilla Extract

Assorted Toppings

*Cover Baking Sheet with foil. ¬†Lay another LONG sheet of foil on top with enough excess foil to lightly cover and protect your cake! ¬†Unwrap 4 Ice Cream Sandwiches and lay them side by side, touching. ¬†Open Cool Whip and add 1 tsp Vanilla. ¬†Lightly fold in top half of Cool Whip with a spatula. ¬†(TIP: This is what makes the flavor POP a bit more and makes the Cool Whip taste more homemade!!!) ¬†Add a few dollops of Cool Whip on top of 4 Sandwiches. ¬†Drizzle light layer of Hot Fudge on top. ¬†Place in freezer for 10-15 minutes to let the first layer of Cool Whip and Hot Fudge harden on the Ice Cream Sandwiches. ¬†Take out of freezer and add 4 More Ice Cream Sandwiches on top. ¬†Repeat with Cool Whip and Hot Fudge. ¬†Put back in freezer for 15 minutes. ¬†Take out of freezer and add remaining 4 Ice Cream Sandwiches. ¬†Now, drizzle a bit of Hot Fudge on the last layer of Ice Cream Sandwiches. ¬†You should have about a 1/2 carton of the Cool Whip left. ¬†Add your ¬†other teaspoon of Vanilla to the Cool Whip and fold in with spatula. ¬†Carefully Coat the ENTIRE CAKE with the remaining Cool Whip. ¬†Its fun, its simple….just make it look like a fluffy cloud. ¬†Pop back in the freezer until ready to serve!!!! ¬†Enjoy!

The Perfect Pasta Salad

INGREDIENTS:

  • 1 Box Elbow Macaroni cooked al dente and cooled
  • 2 Carrots, diced
  • 4 Scallions, sliced
  • 6-7 Small Sweet Red, Orange & Yellow Peppers, chopped
  • 1 carton Cherry Tomatoes, chopped
  • 2 small or 1 large Cucumber, seeded and diced
  • 1-2 small inner Celery Stalks WITH GREENS, diced
  • 3 Hardboiled Eggs, chopped
  • 8 oz Colby Cheese, cubed
  • Handful of Fresh Basil, chiffonade
  • Salt and Pepper to taste

DRESSING:

* Mix all dressing ingredients together. If too thick, thin out with a little more buttermilk. Pour dressing over cooled noodles. Add all the gorgeous veggie toppings. Mix until combined. Enjoy!!!

 

TIPS:

There are so many options for Pasta Salad.  To make it more healthy, use Whole Wheat Pasta and Fat Free or Low Fat dairy ingredients.

If there is a veggie you don’t like, LEAVE IT OUT and substitute it with something you do like.

Swap out the Fresh Basil for Fresh Dill and add 1 tsp Dried Dill to the Dressing.

The best thing about Pasta Salad is, its almost impossible to mess it up!!! Get Creative!

I’m about to knock your socks off. Seriously. Anyone looking for a quick and tasty week night dinner? ¬†One that is so simple your kids can help you make it??? ¬†And one that your kids will actually EAT!!! ¬†Then look no further. You are about to fall in love with my Pepperoni-Pull-Apart-Pizza.

2 Cans Biscuits, Grated Mozzarella, Grated Parmesan, Pepperoni, Red Sauce, Garlic Salt, Parsley (not pictured: Oregano & Pepper)

First, separate each biscuit and cut into quarters. Slice in half, then in half again. You can use a knife, or I found a dough cutter worked like a charm….and was easy enough that the kids could do it!

Next, put all the dough pieces I a large bowl and drizzle with Olive Oil, Garlic Salt, Parsley, Oregano and Pepper. Toss to coat, making sure all the dough pieces are covered in EVOO.

Cut pepperoni to bite sized pieces and add to bowl.

Mix Cheeses & Pepperoni

Add Grated Mozzarella and Grated Parmesan.  Mix gently.

Add a Little over 1/2 the mixture

Lightly grease a Bundt Pan.  Add a little over 1/2 the mixture into the pan.

Then, lightly spoon red sauce over bottom layer. Carefully…don’t drown it!!!

Last, add remaining mixture on top to cover the sauce layer.

Pop into the Oven and Bake.  Tip: If it starts to brown too much, lightly cover with foil the last 10-15 mins.  You want to be sure the inside has had time to cook completely!

While the Pepperoni-Pull-Apart-Pizza is in the oven, I also highly recommend letting your little helpers make the side dish to enjoy with dinner: a salad chock full of veggies!  Story, and her assistant kitty Glamour, had a blast topping the lettuce with a variety of colorful veggies!

Carefully remove from the Bundt Pan. ¬†Take a long knife to slice around the edges if it doesn’t come out easily. ¬†Mine just needed a little coaxing, then slid right out when I turned the pan over.

TIP: You can also change up the flavors by adding a variety of different fillings. ¬†Omit the pepperoni if you’re a vegetarian, and add in Mushrooms, Peppers & Onions. ¬†Make one with Sausage and Cheese. ¬†Add some Crushed Red Pepper if you like heat. Experiment with different sauces: Pizza, Marinara, Tomato Basil, 4 Cheese, etc. ¬†Get Creative! ¬†The possibilities are endless!

Pepperoni-Pull-Apart-Pizza

  • 2 Cans pre-made Biscuits (or pizza dough) *I used Immaculate Baking ButterMilk Biscuits
  • 2 Cups Shredded Mozzarella
  • 1 Cup Shredded Parmesan
  • Handful Pepperoni, cut into bite-sized pieces
  • 1/3 Cup Red Sauce (I used about 4 heaping TBS of Rao’s 4 Cheese…its what I had in the pantry)
  • 2 TBS Organic Extra Virgin Olive Oil
  • 2 TBS Dried Organic Parsley
  • 2 tsp Dried Organic Oregano
  • 1 tsp Organic Garlic Salt
  • 1/2 tsp Organic Pepper
  • Olive Oil Spray, or Coconut etc

*Preheat Oven 350.  Cut each Biscuit into quarters (4 pieces).  In a large mixing bowl, add dough pieces, cheeses, EVOO, parsley, oregano, garlic salt & pepper.  Mix to combine making sure all pieces are coated in oil.  Grease a Bundt Pan with spray and add a little over half the dough/cheese/pepperoni mixture into the bottom.  Add a thin layer of sauce on top, then cover with remaining dough mixture.  Cook for about 30 mins or until completely cooked through.  Cover with foil if browning too quickly!  Remove and let cool for 3-5 mins.  Turn Bundt Pan over to release Pizza.  Use a knife to loosen side if needed.

Like I said, this is such a simple and delicious meal to make on the fly. ¬†I think my husband liked it even more than the kids. ¬†Seriously, he said he thinks he prefers this over regular pizza!!! ¬†And, it’s a GREAT way to get the kids involved in the kitchen. ¬†They even loved helping with the salad and veggies while the pull apart was cooking. ¬†Anything to get the little ones cooking is a winner in my book!

No Unnecessary Fillers!

First of all: Happy 2014!!!

Let’s start the New Year off right by eliminating unnecessary CRAP from our diet. ¬†It all starts at home with YOU and your choice of ingredients. ¬†Some choose to take the easy way out….but little do they know how¬†simple¬†the healthier version is. ¬†Healthy doesn’t always mean more difficult. ¬†I’ll prove that to you, just wait and see….

Cheddar Sausage Balls with Mustard Dipping Sauce

These are super tasty and at least a little guilt free! ¬†Adding in a bit of Whole Wheat Flour and using herbs and spices really makes the flavors POP! ¬†And the guilt-free mustard dipping sauce is a super healthy addition and really adds some zing. ¬†When I got these off the baking sheets, they were virtually grease free. ¬†I was super impressed….as were all the people enjoying them!!!

So, here is what I started with:

  • Flour (1 Cup Whole Wheat King Arthur Flour & 1 Cup Whole Wheat White King Arthur Flour)
  • Baking Powder
  • Fresh Grated Cheddar (please¬†grate your own…this is a simple step that most people use a shortcut for….you WILL be able to tell a difference in the end result….trust me)
  • 2-3 cloves minced Garlic (can use garlic powder)
  • Dry Mustard
  • Onion Powder (not pictured)
  • 1 lb Nesse’s Sausage (original, hot or extra sage are all delicious!)
  • Champagne with fresh squeezed grapefruit juice. ¬†This helps, I promise!!! (this is for YOU, not the recipe…in case there is any confusion)

TIP: You can also use Turkey or Chicken Sausage as well….it just needs a little extra fat, so be sure to add in a couple Tbs of melted butter or oil so your sausage balls won’t dry out. ¬†I’m also wondering if you could use applesauce……hummm…might try that next and let you know how it turns out. Probably would be good with Chicken Sausage and maybe some apples and fontina cheese…..

That’s when I realized I didn’t buy the HOT sausage, so I needed to spice it up some with:

  • Crushed Red Pepper Flakes
  • Dry Mustard
  • Coarse Black Pepper
  • Rubbed Sage
  • Salt

*Add as much or as little of these as you’d like. ¬†You can add anything you want to change the taste of these!

Put all your dry ingredients into a large Mixing Bowl.  Flour, Baking Powder, Garlic,  Onion Powder, Dry Mustard, Red Pepper Flakes, Sage, Salt & Pepper.  Mix to Combine.

Add Cheese

Add Grated Cheddar Cheese to Dry Mixture and toss to combine and coat the cheese.

Next, add the UNCOOKED sausage to the mixture. Use your hands and really get in there!!! Don’t be scared. ¬†You need to break up the sausage and make sure it is all mixed in together.

You’ll notice it is not binding completely together. You need a little liquid to help this. ¬†Add 2-4 TBS 2% Milk until just moist. ¬†Add it in a little at a time so you don’t overdo it!!! I’m also going to experiment and use beer next time! ¬†It should look like this and shape into a ball easily!

Roll them into Bite-sized Balls and place them on a cookie sheet.  I had enough to fill 2 full cookie sheets (24 on each) and most of a 3rd cookie sheet.  I made about 67.  So you should get anywhere from 55-70 depending on the size of your balls.

Pop them in the Oven on 350 for 15-20 mins or until browned and sausage is fully cooked.

ENJOY & DEVOUR!!!

This recipe is basic and can be changed up in so many ways. ¬†I’ll also post another flavor change up for you, but here is the Basic Cheddar Sausage Ball Recipe:

Healthy-ish Cheddar Sausage Balls

  • 1 Cup Whole Wheat Flour (King Arthur)
  • 1 Cup Whole Wheat White Flour (King Arthur)
  • 1 1/2 TBS Baking Powder
  • 4-6 oz. Freshly Grated Sharp Cheddar Cheese
  • 1 lb Nesse’s Sausage
  • 2-4 TBS 2% Milk (2 Tbs at a time)

TIP: Above is the BASIC recipe.  You can change/add any herbs/spices from here on!

  • 1 TBS Rubbed Sage
  • 1 1/2 tsp Onion Powder
  • 2 tsp Dry Mustard
  • 1-2 tsp Crushed Red Pepper Flakes
  • 2-3 Cloves Minced Garlic (or 1 1/2 tsp Garlic Powder)
  • 1/2 tsp Fresh Coarse Ground Black Pepper
  • Pinch Salt

Mix all ingredients (flours, baking powder, herbs & spices) to combine EXCEPT the Cheese, Sausage & Milk. ¬†Next add grated cheese to dry ingredients and toss to coat cheese. ¬†Then, with your hands, crumble the sausage into the mixture…breaking it up and incorporating it into the mixture. ¬†Do not overwork!!! Add enough milk to moisten the mixture, 2 TBS at a time. ¬†(Tip: if you used turkey or chicken sausage, it might take a little bit more!!!) ¬†Roll into bite sized balls. ¬†Bake 350 for 15-20 mins until browned and sausage is cooked through.

Mustard Dipping Sauces:

* Combine equal parts, or 2-3 heaping TBS, Creole Mustard and Dijon Mustard.  Mix.

* Combine equal parts Yellow, Dijon & Whole Grain Mustard with a dash of Worcestershire. Mix.

* Combine 2 TBS Whole Grain Mustard & Dijon Mustard, 1 TBS Mayonaise, Sour Cream or Greek Yogurt.  Mix.

And there you have it, folks. ¬†Probably one of my husband’s favs. ¬†I hope you enjoy the sausage balls as much as my family does. ¬†I’m also going to quickly share a flavor change up for you! ¬†Here goes:

These are out of this world!!! But, careful, the pack quite a kick!!!

Here I used the same dry ingredients in my basic recipe, but added in 2 TBS dried jalape√Īo bits. These bad boys are SUPER spicy!!! You could also substitute fresh jalape√Īo. ¬†Depending on your spice preference, one should do the trick…or even half if you don’t like heat. ¬†I also omitted the fresh garlic and red pepper flakes.

  • 2 TBS Dried Jalape√Īo Bits
  • 1 TBS Rubbed Sage
  • 1 TBS Dry Ground Mustard
  • Fresh Black Pepper & Salt

Next add in your freshly grated Sharp Cheddar Cheese and 3 diced Scallions. (whites and green parts)  Toss to combine and coat in dry mixture.  Add the sausage.  Mix with hands.  Add a bit of milk until moistened.

Pop in the Oven

350 for 15-20 mins.

Dash is in LOVE with Star Wars. ¬†He used to be obsessed with Thomas the Train….now, STAR WARS is where it’s at! ¬†Seriously, he can tell you all sorts of useless information. ¬†He even schooled his Dentist when Dr. James made an incorrect statement. ¬†So funny. ¬†Gotta love him!

First, the Decorations. ¬†We saved a TON of $$$ by using Mark and Rhett’s old Star Wars toys. ¬†It turned out AWESOME and was definitely the frugal way to go. ¬†It let me use the old toys, but kept them out of the way of all the kids so they remained intact and didn’t get broken at the party!

These were so easy to make, and the HIT of the Party!!!!

Take a regular pool noodle and slice it in half.

Using the sliced half, cover with sliver duct tape.

Then, using colored electrical tape, Decorate!

The Kids could wail on each other, but not get hurt!

AWESOME!!!!

I took some nerf guns and TONS of bullets and let them go to town!

All the kids loved this one!

We ended up letting them go one at a time.

That way they could see who popped it first!

I made this over the weekend and it was delish & super easy! The kids and hubby GOBBLED IT UP!!!!

I used Challah Bread. Sooooo good with these flavors! You can find it at your local store bakery. Sure makes a killer French Toast!

The Egg/Custard Mixture was easy. I didn’t measure anything, just threw it all into a large bowl, whisked it, and it turned out great! ¬†This is approx what I think I used, measurement-wise! And it depends on how many slices you want to make. I did 3/4 of the loaf (prob 8-10 slices). Increase egg and milk if you want to do more! ūüôā

So to make this you need:

  • 1 Loaf Challah Bread
  • 5 Organic Eggs
  • 3/4 cup Organic Milk (I used 2%)
  • Zest of 1 ORGANIC Orange (peel and serve fruit with breakfast!)
  • 2 T Organic Coconut Palm Sugar (it’s unrefined and brown. ¬†Delish!!!)
  • 2 T Ceylon Cinnamon

Dip bread in to coat. Let absorb liquid for 20 seconds and flip!

Let Bread Drip Off Excess.  Melt Knob of Organic Butter on Preheated Skillet Over Med to Med-Low.

Cook Slow and Low until Golden Brown.
